Make This for Your Kids

Sometimes, I get really tired of cooking. REALLY tired. Like cursing at vegetables tired. And just when I think I can’t get any more tired of cooking, I think ahead to the forever more years I am sentenced to cooking and then I get just a liiiiittle more tired of cooking. Fortunately, I don’t feel it too often and when I do, I just pretend to have a debilitating headache and allow my chivalrous husband to sweep in and rescue me with takeout.*
We’ve got a pretty solid rotation of about 20 meals that keep me from getting too bored in terms of dinner. But it’s the lunch that gets me. Grilled cheese, turkey sandwich, nuggets and veggies, macaroni, repeat. Blech. So I was so excited to see this significantly healthier spin on grilled cheese. Tried it today and it was a hit.
What I changed: Instead of the rye (or sourdough?) I used the ever-so-classy Iron Kids bread. I did purchase the correct bread but it tasted stale and disgusting. Thanks again, Kroger! I also did not make my pesto sauce. I needed the total prep time to come close to that of a plain old grilled cheese, so I opted for the jarred stuff. Tasty. Also, after requests for seconds, I snuck some sauteed spinach in the sandwich. The boys were none the wiser.
